Project EATS (Art. Food. Life.)

Using what we have. Creating what we need.

On the farm at Kingsborough Community College (KCC) we collect and compost about 250 lbs of vegetable food scraps a week from their culinary department. During the first 3 weeks of December we will collect over 1000 lbs of food scraps from the Saturday Greenmarket at McCarren Park.

Residents around the park have reduced their garbage footprint by separating their compostable food scraps and droping them off at the market on their way to buy more farm fresh food.

We benefit in two ways from first this nitrogen rich material will aid in making a well balanced compost that we can add to our raised beds in the spring, and second we are able to demonstrate a small scale composting project to the KCC community.
